Italy is a β€œgarden”, it has a unique biodiversity in the world. Our goal is to enhance as much as possible the variety and purity that distinguishes our land. The production of our honey takes place precisely on the mono flora (single bloom) to savor each specific aroma.

To obtain honey of different botanical origins, the hives are brought to their respective blooms throughout the year. This operation is called "nomadism" and as with other agricultural activities, atmospheric conditions play a role of fundamental importance. This is why the selection of our honeys, as well as their respective characteristics, may vary depending on the vintage.

On our farm we also have permanent hives, which therefore reside permanently during the year in only one area. With these we harvest lime, coriander, alfalfa, sunflower as well as our award-winning wildflower honey and honeycomb.

The many substances that make up honey, including mineral salts, vitamins, enzymes, "complex" and "simple" sugars (directly assimilated by the body), make it one of the most wholesome and healthy foods for our daily diet. After the bees have stored it in the hive, it is extracted by cold centrifuging so it is not heated or extracted with processes that could alter its natural composition. After decanting in the stainless steel ripening vats which lasts a few days, it is put into jars. With the lowering of the temperature, depending on the different botanical origin, it begins to become cloudy and tends to crystallize. Even today we adopt this natural process, as a duty for the genuineness of a live food, respecting a correct and professional condition of families throughout the year. In fact, speaking of Italian Honey, we underline that this product retains all its natural nutritional properties, not having undergone any treatment to modify them.

 
 

Acacia

Among our most awarded honeys. Delicate taste. Floral aroma, light, among the very few honeys that does not crystallize thanks to its very high percentage of fructose (such as chestnut and honeydew).

Taste slightly acidic and very sweet due to the presence of fructose, it pairs well with savory and spicy cheeses: Formaggio di Fossa, Pecorino Romano, Provolone and Canestraio Crotonese. Also delicious with ricotta.


CITRUS FRUITS

Fruity taste. Slightly fragrant and aromatic.

Intense smell of orange blossom, fresh it pairs well with Caciocavallo del Monaco, Ragusano or Maiorchino.


HIGH MOUNTAIN

Fresh taste. Produced at high altitudes, it has a pleasant taste and the characteristic aroma of alpine flora.

Multifloral honey with prevailing characteristics of rhododendron. It pairs well with seasoned mountain pasture cheeses.


bergamot

Pleasant taste. Sweet, persistent flavor, rich in floral aromas and perfumes.

Sweet and persistent flavor, rich in floral aromas and perfumes. The pleasant taste pairs well with savory and spicy aged cheeses. Also delicious with ricotta.


cHESTNUT

Bitter taste. Very particular, appreciated by those who prefer an unusual honey.

Astringent, tannic, bitter odor, however pleasant, it pairs well with cheeses that are not too spicy and with sweet notes, Caciotta, Puzzone di Moena, seasoned Caprini.

If too fresh, honey could prevail.


cHERRY TREE

Fine taste. Very pleasant and delicate, similar to acacia, the aroma is reminiscent of spring.

Fresh floral aroma, with a sweet and savory taste, it pairs well with medium-aged and soft cheeses.


STRAWBERRY TREE

Honey with an inimitable, balsamic and astringent taste. Much sought after by its admirers.

Intense bitter smell, toasted barley, decidedly bitter persistent honey pairs well with creamy and soft cheeses with cream or butter flavor such as Ricotta, Ricotta Romana, Mascarpone, Robiola.


coriANDER

Honey of a light color, similar to hazelnut, once crystallized. Sweet taste, slightly balsamic, with medium-strong intensity. It pairs well with aged or herbaceous cheeses but also with ricotta and stracchini, it goes nicely with white yogurt.


SUNFLOWER

Typical honey of our lands, very rich in glucose, with a mild flavor and an amber yellow color similar to that of the flower.

Vegetable smell of wet straw, with a slightly fruity and sweet taste, it pairs well with Taleggio DOP, Asiago di Malga or Pecorino di Capracotta.


lavANDER

Fragrant taste. Fine table honey, fresh and thirst-quenching, reminiscent of passion fruit, an excellent dessert.

Intense aroma of aromatic plants, fresh and floral taste, it pairs well with Montasio DOP, Sicilian Pecorino or Sardinian DOP.


lEMON

350g

Floral taste. White, fresh and very rare. Excellent as table honey and also as a sweetener.

Intense fruity smell, fresh but not prevalent taste, it pairs well with strong hard cheeses.


HONEY DEW

Balsamic taste. Very fragrant, rich in mineral salts and enzymes, excellent in hot milk.

Caramel smell, slightly sweet, slightly savory, persistent, it pairs well with Pecorino di Montagna both from Tuscany and Marche or with Gorgonzola and Castelmagno.


millefiori

Produced by our bees in permanent hives on the farm, among the most complete (and even awarded) honeys for the floral biodiversity that composes it.

Intense taste. Select the best of various flowers. Classic ingredient for many uses.

Sweet floral taste thanks to the different botanical origin of its nectars, indicated with yoghurt and fresh cheeses.


LIME

Produced from the flowers of the lime trees that can be found on our farm. Very penetrating flavor, vaguely mentholated, ideal in evening herbal teas.

Typical aroma of lime blossom, mentholated taste of camphor very fresh in the mouth with balsamic notes, it pairs well with mountain cheeses such as Castelmagno or Bitto.
